The most appropriate nursing action is to WORK WITH THE NUTRITION STAFF TO PROVIDE NUTRITIOUS MEALS AT OFF HOURS. 
The nurse should respect the decision of the patient about the fasting. When the patient break his fast, the nurse should ensure that the patient eat balanced and nutritious meals.
